Instructions:
1. Add the aquafaba, chopped garlic, sea salt, and lemon juice to a tall jar.
2. Use an immersion blender and blend on high.
3. Slowly drip in the oil with the blender running on high speed. Gradually increase to a slow stream. This should take 1-2 minutes. The slower, the better!
4. Move the blender up and down to add air and help thicken it. If it’s too thin, add more oil to reach a creamier consistency.
5. Use right away or store in the fridge. It will thicken as it cools.
Store in a sealed container in the fridge for up to 2 weeks!
